Not worse over time...

Hi Leslie,

No problem on the wordiness. I'd rather have some details to go by. I get too many submissions asking "Could I have Gluten Intolerance" and no details.. ughhhh....

So, the answer to your first question is 'NO', gluten intolerance doesn't get worse over time.... but you might become 'more sensitive' to it simply because your body KNOWS it's not good for you and when you avoid it for long periods and reintroduce it, then your body goes, "Yuckkkkkkkk".

To understand this better, think of smoking and smokers. The first time someone smokes, they cough and hack and get VERY sick sometimes even throwing up. But if you continue to smoke, your body adapts and 'deals with it'. It doesn't mean that it's now good for you, just that your body doesn't make you sick every time that you smoke.

Then if you stop smoking again, you will notice it and possibly even become sick even if you go into a room with cigarette smoke. It's not that your 'cigarette intolerance' has become 'worse', it's that it's always been bad for you but because you've avoided it for long periods, you notice it more when you get exposed.

Your next question about cross contamination is a good one, but one that is not likely to be of real significance to you or most people. While everyone needs to discover their level of intolerance to gluten, and that's why I recommend initially going 100% gluten free for a few months, the vast majority of people with 'just' gluten intolerance and not full-blown Celiac Disease, are going to be able to eat small amounts of gluten now and then without problems.

Again, you'll have to discover whether that is true of you or not on your own, but the good news is that the 'odds' are that occasional cross contamination is not likely to be a problem for you...
